The Greatest Soup Ever

Two short things! Tonight when I got home I made The Greatest Potato Soup By The Greatest Woman Ever and let me tell ya, it was delicious! I will be filing this recipe away for later because man it was so good. I did change it up a bit. First, I didn’t use free-range chicken broth.. and yes I feel a little guilty about this but I’m not going to lose sleep over it! Second, I used fat-free cream cheese. Then I used Turkey Bacon. And I used dehydrated minced onion instead of onion powder. Next time I’ll probably throw in a little onion powder for good measure. May even sautee an onion beforehand to kick it up a notch. But it was delicious, nonetheless!

Next, I reinstalled WordPress. I’m starting from scratch with the absolute latest version. I am going to dive into creating my own WordPress Theme so that I can edit it and whatnot as I please.  Keep a lookout for it and please don’t get discouraged or bored with the current template :/ I promise I’m gonna work on it!

Spaghetti Squash Pie & Train Man

Italian Turkey and Spaghetti Squash PieFor lunch today I made Italian Turkey and Spaghetti Squash Pie. It was delicious! I accidentally put in 1 pound of Ground Turkey instead of 1/2 a pound so I was unable to fit it into a pie dish. Technically, it wasn’t a pie in our case. But it was close enough. It sure was yummy though. It’s a Weight Watchers recipe I got online and wow I can’t believe how tasty it is. I’ve used Spaghetti Squash in the past to make Spaghetti and it turned out okay, a little too saucy. Since then I have yet to experiment with it. I love it and I think it is a wonderful alternative to starchy pasta. A great low calorie, low fat alternative to pasta, definitely! The only change I made to the recipe was that I added about 1/4 Tsp. of Salt and Pepper to it.. Because it seemed to be lacking in salt as far as the other ingredients went. It turned out wonderful, not too salty at all. Oh and I used Fat Free Mozarella cheese for the topping. You could probably alter this in a LOT of ways but I think no matter how you do it, its gonna turn out yummy.

I’ve been cooking a lot more in the last couple of weeks. Trying to be less lazy in the kitchen and try new things. This week we are going to have Chicken Curry and Sweet ‘n Sour Meatballs (both rice dishes), Red Beans & Rice and Very Mom’s Potato Soup recipe :) I love the idea of me having all of our meals planned out for the week. If I cook 4 out of 5 days, that leaves plenty of leftovers for Gene’s lunches (I eat Lean Cuisine for lunch during the weekdays) and maybe even some for the weekend! Yay for cooking. My love for it is growing so quickly and I’m starting to really enjoy being in the kitchen, which is a complete 180° from what I used to be like.

Last night Gene and I watched Train Man, the live action tv series (first episode) not the movie. I liked it and thought it was pretty funny. Interested to see the rest of the series. A couple of weeks ago Gene and I went to B&N to sit around and read and he read the first book in the Manga series. So far, so good!

Lite Chicken Cordon Bleu

So tonight I had my mom and sister over (dad never comes, party pooper!) for dinner :) I made Chicken Cordon Bleu (I’ll put the recipe at the bottom of the entry) with butter noodles and peas & carrots. It was pretty good, if I say so myself!

I went to Target and spend $22 on about 20 pairs of socks. I can’t believe it.. I know, I am crazy. I recently became addicted to CUTE socks and I want a million pairs rightnow! Target had a humongous sale on socks and they had tons of cute colors/designs for only 98 cents per pair! I love Target clearance.. it is the best :D

Tomorrow we are taking the dogs to the dog park at around 10 AM so that we can be home by lunch. After lunch we are going to the Cowboy Hall of Fame. My boss gave us free tickets so I think Gene, Layla and I are going to meet Malinda and Della there. It’s something to do.. and it’s free! Can’t beat that :D

Lite Chicken Cordon Bleu

4 (or however many you want) Chicken Breasts
Shredded part-skim mozarella cheese
Lunch meat medium sliced ham
Butter (I use Smart Balance)
Salt / Pepper / Garlic Powder / Onion Powder

Put the chicken breast between some saran wrap and pound it with a meat mallet (the flat side) until it is pretty thin. I’m thinking 1/4 to 1/2″ thickness. I seasoned both sides with salt, pepper and garlic powder. Put a slice of ham on it and top that with some mozarella. Roll it up tight and store it in the fridge with saran wrap around it rolled up. Do that for however many people are going to be eating.

Then melt butter (A decent amount, I’m thinking 1/4 C.) with salt, pepper, garlic powder and onion powder in a skillet type pan. Once that is boiling, put the chicken breasts in the skillet and let them cook on low to medium heat for about 20-30 minutes. Rotate the breasts about 2-3 times to make sure it cooks evenly on all sides.

Pretty yummy and low on fat and calories! You can always use swiss cheese and bread crumbs to bread it… but it will add to the fat and calories!

Astro’s official name change: Mister Fart Knocker

Manda totally inspired me to make a new layout! It wasn’t that hard to do, either. She mentioned something about working on a layout and I immediately became overwhelmed with motivation. I also can’t leave out the fact that my love for Gene totally inspired this layout. I just started thinking about my deep love for him and voila :)

Nothing new other than the layout, though! Went over to my parent’s house this evening to use my daddy’s foodsaver to vacuum seal up about 10lbs of hamburger meat & eat some dinner over there. He made up some “Leftover Pizza” (the recipe to that is below) and it was very yummy!

Gene and I went out to mow the yard a few nights ago and we were both covered in Mosquito bites afterwards, him more than me. But somehow, I ended up with all of the itchy ones. I got hardly any sleep at all last night and that was enough to send me to Walgreens this evening to see what else I can put on them. See, the problem is that they are on my feet and if my feet touch the mattress, they start itching right away! Anyway, the pharmacist suggested Benadryl cream and Benadryl caplets, so I got both and I’m dosing up on both before I go to bed this evening! Wish me luck.

P.S. The only update on Astro is that he has been farting a lot in the last couple of days. We haven’t changed his food at all so I’m thinking he is eating weird stuff out in the backyard that is causing it. The loud farts are the funniest! And the silent ones are the deadliest…
