The Hillbilly Housewife
Tonight Gene and I had meatloaf with cornbread and fried potatoes. I was doubting that we were going to fix something that elaborate because we both didn’t get home until a little after 6 and anyone who has ever cooked meatloaf knows that it takes a minimum of an hour to cook. We like ours extra crispy, so it takes even longer. But, we decided to go ahead and just make our tummies wait. And boy was it worth it. Yummm :)
My meatloaf is super simple and there really are no measurements. I use 1 pound of lean ground turkey, 1/4 c. egg subsitute, 1 “row” of reduced fat ritz crackers, salt, pepper, 1 small onion chopped, 1 green bell pepper chopped and around 1/4 to 1/3 c. ketchup. Mix all of that together until its nice ‘n meatloafey… Smash it into a dish, squirt ketchup all over the top & bake until burnt on the edges. Gene and I looooove the burnt edges :D And the fried potatoes is just chopped up onion & diced potatoes cooked in butter.
Anyway that was our dinner. Tomorrow night I think we are going to have meatloaf sandwiches with leftover meatloaf and leftover potatoes. We are trying to eat up whats in our fridge currently. We have Vegan brownies with coconut pecan frosting and I can gaurantee those wont be in there much longer :) I may take some to work with me tomorrow. Good stuff.
I’ve been reading this website called The Hillbilly Housewife and I am absolutely addicted to it. She has some GREAT money saving tips, time saving tips and recipes. Everything sounds awesome. I made her corn bread recipe and it tastes really yummy. I’ll never buy the packaged cornbread again. It is SO simple! I am on a huge “cooking” kick. Ever since we moved here I really love to do stuff in my kitchen. It is so much more spacious and open than our old rent house. I love to do dishes, cook, etc.
