For lunch today I made Italian Turkey and Spaghetti Squash Pie. It was delicious! I accidentally put in 1 pound of Ground Turkey instead of 1/2 a pound so I was unable to fit it into a pie dish. Technically, it wasn’t a pie in our case. But it was close enough. It sure was yummy though. It’s a Weight Watchers recipe I got online and wow I can’t believe how tasty it is. I’ve used Spaghetti Squash in the past to make Spaghetti and it turned out okay, a little too saucy. Since then I have yet to experiment with it. I love it and I think it is a wonderful alternative to starchy pasta. A great low calorie, low fat alternative to pasta, definitely! The only change I made to the recipe was that I added about 1/4 Tsp. of Salt and Pepper to it.. Because it seemed to be lacking in salt as far as the other ingredients went. It turned out wonderful, not too salty at all. Oh and I used Fat Free Mozarella cheese for the topping. You could probably alter this in a LOT of ways but I think no matter how you do it, its gonna turn out yummy.
I’ve been cooking a lot more in the last couple of weeks. Trying to be less lazy in the kitchen and try new things. This week we are going to have Chicken Curry and Sweet ‘n Sour Meatballs (both rice dishes), Red Beans & Rice and Very Mom’s Potato Soup recipe :) I love the idea of me having all of our meals planned out for the week. If I cook 4 out of 5 days, that leaves plenty of leftovers for Gene’s lunches (I eat Lean Cuisine for lunch during the weekdays) and maybe even some for the weekend! Yay for cooking. My love for it is growing so quickly and I’m starting to really enjoy being in the kitchen, which is a complete 180° from what I used to be like.
Last night Gene and I watched Train Man, the live action tv series (first episode) not the movie. I liked it and thought it was pretty funny. Interested to see the rest of the series. A couple of weeks ago Gene and I went to B&N to sit around and read and he read the first book in the Manga series. So far, so good!
